Ingredients
  • 2 squares (1 oz each) semisweet chocolate
  • ¾ cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2¼ cups all purpose flour
  • ¼ cup cocoa
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup buttermilk
  • Filling:
  • ¾ cup butter, softened
  • ¾ cup marshmallow cream
  • 1½ cups icing (confectioners’) sugar
  • 1 teaspoon vanilla
Instructions
  1. Let`s start our Chocolate Cream Whoopie Pies recipe, Melt chocolate in microwave and set aside to cool.
  2. In beater bowl, beat butter and sugar until light and fluffy. Beat in the eggs. Stir in vanilla and melted chocolate.
  3. In a small bowl, combine flour, cocoa, baking powder, baking soda and salt. Add to creamed mixture alternately with buttermilk.
  4. Line cookie sheet with parchment paper and drop spoonfuls of dough 2 inches apart onto parchment.
  5. Bake at 375 degrees F for about 8-13 minutes (depending on the size you made the cookies) until edges are set.
  6. Cool 2 minutes and then remove to rack to cool completely.
  7. Filling: beat butter, marshmallow cream and icing sugar together until light and fluffy. Stir in vanilla.
  8. Spread filling on one cookie and top with a second cookie.
