Apple Orange Bread

Apple Orange Bread

Ingredients
  • 2 large unpeeled baking apples -- cored and quartered
  • 1 large orange, unpeeled -- quartered
  • 1½ cups raisins
  • ⅔ cup shortening
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon lemon extract
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • ⅔ cup orange juice
  • 1 cup walnuts -- chopped
Instructions
  1. In blender or food processor, process apples, oranges and raisins until finely chopped, set aside.
  2. In a large mixing bowl, cream shortening and sugar.
  3. Add eggs, one at a time, beating well after each addition; beat until light and fluffy. Beat in extract. Combine dry ingredients; add to creamed mixture alternately with orange juice.
  4. Stir in fruit mixture and nuts.
  5. Pour into 3 greased 8″ X 4″ loaf pans.
  6. Bake at 350 degrees doe 50-55 minutes. or until a wooden pick inserted near center comes out clean.
  7. Cool in pans for 10 minutes before removing to wire racks to cool completely.
