Put the camp barbecue to good use with a selection of barbecued meats. With a little forward planning you can have the meat marinading overnight, making this easy Easter day main even simpler.
Ingredients
  • 1 kg lamb leg boned cubed
  • 1 onion finely chopped
  • 2 tbs garlic
  • ½ cup fresh mint finely chopped to taste
  • 1 tbs soy sauce
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 pinch seasoning to taste
  • 2 chicken stock cube
  • 100 mls olive oil
  • 2 tbs lemon juice to taste
Instructions
  1. In a large bowl, combine onion, garlic, mint, soy sauce, cumin, coriander, salt and pepper, stock cubes and oil.
  2. Add lamb, mix well, cover and refrigerate overnight.
  3. Soak kebab skewers in water, then place lamb onto skewers.
  4. Cook on heated barbeque hotplate to seal then cook on grill plate over flame for the last 5 minutes.
  5. When almost cooked, pour over lemon juice.
  6. Serve hot.
